How many and what size panels do I need?

A rule of thumb is to provide about 1m2 of absorber area per person in the household.   Note the difference between absorber, aperture and gross collector areas, all of which may be used to mean the "size" of the collector.  See here for definitions of these terms.

A related question regards the size of hot water cylinder required to suit a given collector set up.  For this, allow 6-7 litres per 47 x 1500 mm tube, or 9-10 litres per 58 x 1800 mm tube.  Note that this can be varied, a smaller cylinder can be used but it is more likely a heat dump circuit will be required to waste excess heat in the summer.
